Mama’s Thumbprint Cookies

  • 1 c. butter, softened
  • 1 c. granulated sugar
  • 1 large egg plus 1 large egg yolk
  • 2 t. vanilla extract
  • 2 2/3 c. all-purpose flour
  • 1 t. salt
  • 1/2 c. ground walnuts
  • 1/2 c. Mama’s Preserves (any flavor) (click here to purchase preserves)

Preheat oven to 350°. Cream butter and sugar until light and fluffy. Add egg, egg yolk and vanilla and mix until incorporated. Combine dry ingredients and ground walnuts. Add to creamed mixture and mix until dough pulls away from sides of bowl. Wrap in plastic and chill dough at least 1 hour. Roll dough into 1-inch balls. Place on parchment lined baking sheet 2 inches apart. Make an indentation in the center of each ball with your thumb or the handle of a wooden spoon Fill each cookie with a generous 1/4 t. jam. Bake in preheated oven about 12 – 15 minutes or until edges are golden brown. Remove from oven and allow cookies to rest 5 minutes before transferring to a rack to cool. Top with additional jam if desired. Makes about 3 dozen cookies.
